Elizabeth’s Holiday Granola

Good friends, family and a kitchen filled with homemade dishes are the perfect recipe for a fun holiday season! That’s what happened in the Winging It Buffalo Style kitchen this morning as Elizabeth Gurney and her sister Molly made Elizabeth’s homemade holiday granola. The family friendly event will be happening from 5 – 8pm at Larkin Square located at 745 Seneca Street. All of the proceeds from the granola will be donated to the Food Bank of WNY. Elizabeth’s Homemade Granola

Ingredients:

9 cups old fashioned rolled oats

4 cups shredded coconut

1 ½ cups chopped hazelnuts

1 ½ slivered or chopped almonds

1 cup sesame seeds

1 cup flax seeds

1 cup sunflower seeds

¾ cup honey

1 ½ cup vegetable oil

 

Directions:

Preheat oven to 375 degrees.

Toss the oats, coconut, nuts, and seeds together in large baking pan.

Whisk the honey and oil together in a small bowl. Pour the mixture over the oat. mixture and stir with wooden spoon until all the oats and nuts are coated.

Bake stirring occasionally with the wooden spoon until the mixture turns a nice even golden brown, 45 to 60 minutes.

Remove the granola from the oven and stir constantly to aerate the mixture to keep it from sticking together, until the granola is cool. Store in airtight container.

Makes about 20 cups.
