Gluten Free Thanksgiving Table

It was a Thanksgiving feast on Winging It Buffalo style as Chef Erin from Orchard Fresh was in the kitchen preparing delicious ideas for the big holiday. Ingredients for Stuffing:

– 1 pkg of gluten free stuffing mix

– 1 cup of fresh poultry stock

– 1/2 cup of butter or olive oil

– 1 small onion, diced

– 1/2 head of fennel, diced

– 3 stalks of celery

– Fresh Thyme



-Small dice the veggies

-Sauté in butter or olive oil until tender over medium-low heat

-Toss with gluten free Stuffing Mix and Hot Stock

-Season with fresh thyme, salt and pepper

-Bake in a 325 degree oven until hot and golden


Ingredients for Gravy:

-1 qt. poultry stock

– 1 Tbsp. potato starch



– Reduce stock by half over medium high heat

– Whisk potato starch into 2tsp. of cool water

– Whisk into gravy
