It’s almost time for turkey! Chef Taryn and nutritionist, Mallary Whipple, were in the Winging It kitchen helping us get ready for Thanksgiving. Chef Taryn prepared a delicious Butternut Squash, Apple and Gruyere Gratin (recipe below).

Butternut Squash, Apple and Gruyere Gratin
– 1 pkg (48 oz) cleaned and cut butternut squash cut into bite sized pieces
– 3 Tbsp basting oil
– 1 container of Wegmans Parmesan Cream Sauce
– 3 cups thinly sliced granny smith apples
-1 cup shredded gruyere cheese
– 1/4 cup panko white bread crumbs
-Preheat oven to 450
-Add squash and 2 Tbsp basting oil to large bowl, toss to coat. Season with salt and pepper.
-Arrange squash in single layer on large baking sheet. Roast 25-30 minutes – turn halfway through, until browned and tender. Remove from oven; let cool for 10 minutes.
-Reduce oven 350. Add squash and 1 cup Parmesan cream sauce to large bowl; toss to coat. Pour mixture evenly into casserole dish.
-Add apples and 1 cup Parmesan cream sauce to bowl; toss to coat.
-Top Squash mixture with layer of apple mixture.
-Gently press apples down with spatula. Season with salt and pepper
-Pour remainder of sauce over apples.
-Bake for 30 minutes or until apples are tender. Remove from oven. Top with Gruyere.
-Preheat oven to Broil.
-Combine 1 Tbsp basting oil and panko in bowl; sprinkle evenly over cheese.
-Return to oven; broil 2 to 3 minutes or until cheese melts and topping browns.
-Remove from oven. Let rest for 10 minutes before serving.
