Chef Scottie’s Pumpkin Bread

It’s not a fun holiday on Winging It without Chef Scottie is in the kitchen! The eccentric chef from the Riley Street Station in East Aurora made a delicious pumpkin bread, check out the recipe below:


2cups brown sugar

1cup canola oil

4 lg. eggs

16oz. canned pumpkin

Salt to taste

2tsp baking soda

1tsp allspice

1tsp baking powder

2tsp cinnamon

2/3 cup water


-Preheat oven to 350*. Butter and flour two 9”x5” loaf pans.

-Stir together sugar, oil, eggs and pumpkin.

-Combine all dry ingredients in another bowl. Mix together dry and water and add it to wet mixture.

-Divide batter in between two loaf pans.

-Bake for 35 to 45 minutes. Let rest for 12 minutes. Remove from pans to cool.

-Top with pumpkin whipped cream. Garnish with fresh mint.
