What better place to wrap up Local Restaurant Week on Winging It than Encore Restaurant!? Joe Gugino was in the kitchen this morning making a Macadamia Nut Roasted Salmon. Check out the recipe below!

– 2 ounces of coconut chili glaze

– 1 fresh salmon filet

– salt and pepper for seasoning

– 1 cup of arborio rice


– Season the salmon with salt and pepper, then place on a medium hot grill pan and cook for about 3-5 minutes per side

– cook arborio rice as directed to make risotto. Add the coconut chili glaze at the end of cooking

– finish the salmon in the oven and bake at 350 degrees for about 5 minutes
