Chicken & Waffles from Providence Social

Winging It continued our Breakfast in Buffalo Week with a downtown hot spot, The Providence Social. Dan & Scott were in the kitchen making their signature chicken and waffles! Check out the recipe below –

Chicken & Waffles


3 Springs of Rosemary

3 ounces of Maple Syrup


baking soda


2 eggs

3 ribs of celery

1 roasted chicken

1 tablespoon of garlic

2 quarts of chicken stock



– Brown onions, celery, in olive oil. add garlic when browned cook till garlic browns up

– Add chicken stock, let come to boil

–  season roaster chicken with salt and pepper and put in oven at 350 for  40 minutes per pound

-. when  gravy comes to boil add roux and whisk thoroughly

–  when chicken is cooked to 160 degrees internal temperature pull out and let cool

– pull the skin off the chicken, then pull the meat from the chicken and add to the gravy

–  add dry and wet ingredients to to make waffle mix. once mixed dice up rosemary and add to mix. take out when waffle is golden brown

–  ladle gravy into bowl and top with waffles
