Milo’s Beef Souvlaki

Prep Time: 10-15 minutes (12-24 hours to marinate meat)
Cook Time: 6-7 minutes

-beef (16-18 oz.)
-1/2 onion
-1 green pepper
-1 cup lemon juice
-1 cup vinegar
-olive oil (enough to cover meat)
-1 oz. salt
-1 oz. pepper
-1 oz. oregano
-3 bamboo skewers
-1 oz. garlic

1). Jaccard the beef and cut into approximately 1 oz. medallions
2). Marinate beef: start with dry ingredients,add vinegar and lemon juice; oil last; enough to cover the beef
3). Wrap a refrigerate overnight
4). Cut veggies, same size as beef
5). Soak skewers in water for 15 mins (prevents sticking/burning)
6). Skewer beef and veggies alternately onto skewers
7). Turn grill to medium-high heat and grill skewers, rotating every 1-2 mins.
