Mediterranean Chicken Meatballs

• Ground dark meat chicken
• Dijon mustard
• Garlic
• Panko bread crumbs
• Shallots
• Salt & pepper
• Fresh dill
• Tatziki sauce
• Fresh tarragon
• Kalamata olives
• Grape tomatoes
• Wooden skewers

1). Mince shallots and garlic
2). Chops herbs
3). Mix chicken with herbs, garlic, shallots, Dijon, panko, salt and pepper
4). Cook a small test batch – taste
5). Adjust seasoning if necessary
6). Pipe out of a pastry bag or form with your hands
7). Bake in 375 oven until they reach 165 degrees
8). Plate with sauce and skewer
