Watermelon Ceviche & Corn, Bean Salad

Chef Sue and Wegmans’ nutritionist Mallary Whipple stopped by the Winging It kitchen this morning to share some delicious recipe ideas for your Independence Day festivities. Who ever thought of putting onions, lime juice, agave and watermelon together? We’re glad someone did, because this Watermelon Ceviche is out-of-this-world scrumptious. Couple this fruity concoction with a protein-rich corn/bean salad and your July 4th cookout will be an explosion of fun!

INGREDIENTS
-1 Tbsp fresh cilantro, thinly sliced, plus extra for garnish
-1/2 Tbsp Food You Feel Good About Chives, cut 1/2-inch lengthwise
-1/2 Tbsp thinly sliced Food You Feel Good About Tarragon
-1/2 Tbsp thinly sliced Food You Feel Good About Fresh Living Basil
-3 Tbsp finely diced red onions
-1/2 Tbsp Food You Feel Good About Sicilian Lemon Extra-Virgin Olive Oil
-1 1/2 Tbsp Wholesome Sweeteners Organic Light Blue Agave
-Juice of 2 limes (2-3 Tbsp), plus extra slices for garnish
-1 tsp Sambal Oelek Ground Fresh Chili Paste
-3 cups seedless watermelon, 1/2-inch dice
-Salt and pepper to taste

DIRECTIONS
1). Add cilantro, chives, tarragon, basil, red onion, olive oil, agave, lime juice, and chili paste to large bowl
2). Gently fold in watermelon; season to taste with salt and pepper. Garnish with lime slices and sprigs of cilantro

*Grilled Corn, Bean & Radish Salad

INGREDIENTS
-6 ears fresh corn, shucked
-1 bunch radishes, trimmed, cut in thin strips (about 1 1/4 cups)
-1 can (15.5 oz) Italian Classics Garbanzo Beans, drained
-2 Tbsp finel chopped Food You Feel Good About Cilantro
-2/3 cup Food You Feel Good About Lemon Vinaigrette (Produce Dept)
-1 tsp Wegmans BBQ Seasoning Shak’r
-Salt and pepper to taste

DIRECTIONS
1).Preheat grill on HIGH 10 min. Coat cleaned grill grate lightly with vegetable oil. Reduce heat to MED
2). Grill corn, turning often, 6-8 min, until lightly browned. Transfer to bowl and cover with plastic wrap, 3-5 min. Remove plastic wrap; let cool about 5 min
3). Cut kernels carefully from cobs; add to large bowl. Add radishes, garbanzo beans and cilantro. Toss with lemon vinaigrette and BBQ seasoning. Season to taste with salt and pepper
