Pan-Seared Sea Scallops & Caviar

-Sea Scallops (3 per serving)
-Vegetable/Olive oil
-Caviar (salmon)
-Blueberry Chili sauce
-Chives (optional)

1). Heat oil in large nonstick skillet over medium-high heat
2). Season scallops with salt and pepper
3). Cook scallops until golden on bottom, about 2 minutes
4). Turn over; sauté until just cooked through, about 1 minute
5). Drain on paper towels, let cool to room temperature
6). Top each scallop with caviar. Garnish with chives (optional) and serve.

Santora’s, located on Transit Rd. next to Olive Garden, is moving in to the old Frog Hair location. They’re keeping all the patio elements and hosting bands outside just like Frog Hair used to do. Osteria 166 is teaming up with Santora’s this summer by offering items from their menu on Thursdays – Saturdays. Osteria will send over some of their staff and kitchen crew to prepare their food on site; this will really help Osteria get their name out in the suburbs!
