Chef Steve’s Stuffed Shrimp

Chef Steve from Francesca’s Italian Restaurant was in the kitchen making one of their best appetizers, Stuffed Shrimp.
Stuffed Shrimp:
2 eggs, lightly beaten
1 cup of panko bread crumbs
2 tablespoons light mayonnaise
1 teaspoon lemon juice
1/4 teaspoon oregano
1/2 teaspoon black pepper
1/4 cup of finely diced carrots
1/4 cup of finely diced celery
1/4 cup of finely diced onion
1/2 lb lump crabmeat
1 lb med to large shrimp
Begin by sauteing the diced carrots, celery and onion in olive oil over medium-high heat. While the vegetables are cooking, take the shrimp and butterfly them by cutting the back to make an opening. Once the vegetables are softened, let them cool and then add the crab meat, mayonnaise, lemon juice, and seasonings an. Then take about 1-2 tablespoons of the crab filling and stuff it into the shrimp. Then coat the shrimp in the egg and coat with panko breadcrumbs. Heat about 1 cup of oil in a sauce pan to medium high heat. Place the shrimp in the hot oil and fry for about 3-5 minutes. Serve with extra lemon slices and enjoy!
