Sassi Cakes: Gluten-Free Angel Delight

-1 1/2 cups Betty Crocker™ All-Purpose Gluten Free Rice Flour Blend
-1 1/2 cups sugar
-1/4 cup cornstarch
-1 teaspoon xanthan gum
-1 2/3 cups egg whites (about 11), room temperature
-1 1/2 teaspoons cream of tartar
-1/2 teaspoon salt
-1 teaspoon gluten-free vanilla
-Fresh fruit, if desired
-Sweetened whipped cream, if desired

*Pre-heat oven to 350 degrees
1). Mix the flour, xanthan gum, cornstarch and the sugar in one bowl; in another beat the egg whites, cream of tartar, and salt together
2). While mixing, add in the dry mixture as well as the vanilla
3). Bake for 40 – 45 min
4). Let cool; then pull apart the angel food cake into tiny crumbles and place in cake cups
5). Top with your favorite fruit (strawberries, kiwi, cantaloupes) and whipped cream!
