-12 Hungarian hot peppers
-1 C Ricotta Cheese
-1/2 C shredded mozzarella
-1/4 C grated pecorino romano cheese
-2 tbsp minced garlic
-2 tbsp crushed red pepper
-2 tbsp minced parsley
-2 tbsp minced basil
-1/2 C pankow bread crumb
-1 C marinara sauce
-a little more mozzarella
1). Cut peppers as directed in a ‘t’ shape leaving top on, remove seeds.
2). Combine ricotta, mozzarella, pecorino, garlic, salt and pepper, crushed red pepper, parsley, basil and panko crumbs, mixing well.
3). Over-stuff each pepper, grill bottoms if desired.
4). Bake until peppers are tender and the cheese starts to brown.
5). Serve on a platter of red sauce with mozzarella melted over the top.
