Chicken Saltimbocca Ravioli

Prep Time:
1 – 1.5 hours
Cook Time: 7-9 minutes
Serves: 2

-1 cup Semolina flour
-1 cup all-purpose flour
-3 eggs
-salt (pinch)
-8 oz. Ricotta Cheese
-1/4 pound Prosciutto
-1/3 pound chicken breast (diced)
-1/4 cup Romano Cheese
-1 stick butter
-spices (as desired)
-sage (as desired)

1). Prep pasta dough (fold together flours, eggs, and salt)
2). Pan sear the chicken breast
3). Prepare the ravioli filling by combining diced chicken with prosciutto, cheeses and spices)
4). Roll out dough; cut to desired shape (you can freeze if not using right away)
5). Prepare sage butter sauce (slowly cook butter until golden brown and add sage)
6). Boil pasta
7). Top with butter sauce or favorite marinara!
