-one 5 oz. boneless skinless chicken breast
-3 oz. of Lobster Meat (ideally, body & claw meat)
-1.5 oz. of Cream Cheese
-2 oz. seasoned bread crumbs
-1/8 cup milk
1). Pound the thick end of the chicken breast until it’s flat
2). Mix the lobster with the softened cream cheese
3). Spread the filling mixture on 1/2 of the chicken breast; fold the chicken over
4). Mix the egg and milk to make egg wash
5). Dip chicken in the egg wash, then the breading
6). Bake at 350 for 12-15 mins. until golden crispy!
**For the second helpings, cut some pita bread up and spread with olive oil, then bake. After, spread some leftover Lobster Filling on top for a great snack or appetizer!
