Chef Oded from the Falafel Bar

Prep Time: 30 mins. (2 hours marinating time)
Cook Time: 30 mins.
Serves: 4-6 people

-10 oz. cod (per person)
-1 lemon
-3 Tbl. Olive Oil
-1 lb. potatoes (thinly sliced)
-3 cloves garlic (thinly sliced)
-3 Tbl. parsley (finely chopped)
-1 small red onion (chopped)
-1 small dried Chili (seeded, finely chopped)
-1 Red Pepper (cored, seeded, thinly sliced into rings)
-1 Yellow Pepper (cored, seeded, thinly sliced into rings)
-2 Bay Leaves
-3 to 4 sprigs of fresh Thyme
-3 Tbl. dry Sherry

1). Place fish in a large non-metallic dish; cut 2 thin slices from one end of a lemon and save for later; squeeze juice from the rest of the lemon onto the fish; add 2 Tbl. Olive Oil. Refrigerate covered for 2 hours
2). Preheat oven to 375 degrees; lightly oil a shallow baking dish large enough to hold fish; spread half the potatoes on base and sprinkle with garlic, parsley, onion, chili and peppers on top; season with salt and pepper, cover with rest of potatoes
3). Pour 1/3 cup water over everything and sprinkle with remaining Olive Oil; cover with foil and bake for 1 hour
4). Increase oven temperature to 425 degrees, season the fish inside and out with salt/pepper and place Bay Leaves/Thyme on top
5). Cut other lemon in half and put on fish; nestle fish into potatoes with lemon on top; bake uncovered for 30 minutes until fish is cooked and potatoes are golden brown/crusty
6). Pour Dry Sherry over fish and return to oven for 3 minutes; serve from dish

Second Helpings
Green Beans and Tomato Sauce

Prep Time: 10 mins.
Cook Time: 30 mins.
Serves: 4 people

-10 oz. green beans (cleaned/trimmed)
-1 tablespoon olive oil
-onion finely chopped
-2 cloves garlic (chopped)
-1 Tbl. paprika
-1/4 teaspoon Chili flakes
-1 Bay Leaf Crushed
-13 oz. can of crushed tomatoes
-2 Tbl. chopped fresh flat leaf parsley

1). Cook the beans in boiling water for 3-5 minutes or until tender; drain and set aside
2). Heat the oil in a frying pan, add the onion and cook over medium heat for 5 minutes or until soft
3). Add garlic and cook for 1 minute
4). Add paprika, chili flakes, bay leaf; cook for 1 minute then add tomatoes
5). Simmer over medium heat for 15 minutes, until reduced and pulpy
6). Add beans and parsley, cook for 1 minute or until warmed through
7). Season to taste, serve at desired temperature!
