Guinness Inspired Potato Cakes


INGREDIENTS

-1 large potato shredded                                        -¼ cup chopped onion
-1 large egg                                                    -¼ cup chopped carrot
-Salt & pepper to taste                                     -Guinness as needed
-¼ cup all-purpose flour                                        -butter for frying
-¼ cup cooked oats                                              -¼ cup cooked barley
-2 tsp chopped garlic                                           -2 tbsp fresh chopped parsley
-½ cup sour cream                                               -½ cup chopped green onion


DIRECTIONS

1). In large bowl combine potato, onion, carrot, egg, salt, pepper, garlic, oats, barley, parsley and flour, mix well
2). Add Guinness until batter comes together
3). Heat butter in frying pan over medium high heat, add batter
4). Cook until golden brown on both sides (about 4 minutes on each side)
5). Garnish with sour cream and green onion

Chocolate Guinness Mini-Cheesecakes

INGREDIENTS
-2 cups Oreo cookie crumbs                              -2 tbsp sugar
-3 tbsp melted butter                                   -24 oz. soften cream cheese
-1 cup sugar                                            -2 tsp vanilla extract
-1 bottle Guinness

DIRECTIONS
1). In sauce pan reduce Guinness in half and let cool
2). In a small bowl combine cookie crumbs, sugar and butter; Press cookie mixture into a mini cup cake pan and cook for 2 minutes, let cool
3). In mixer combine cream cheese, sugar, vanilla and Guinness, mix well
4). Pour batter into cake pan, top with more cookie crumbs and chill for two hours
5). Serve on a bed of peanut butter.
