Protocol Restaurant Makes Beet Risotto

Cook Time: 15 mins
Serves: 4 to 5

-2 Tbl. shallots (minced)
-1 Tbl. fresh thyme (minced)
-1 Tbl. Olive Oil
-3 Tbl. salted butter
-2 cups Arborio rice
-1/2 cup dry white wine
-3.5 cup chicken broth
-4 oz. goat cheese
-6 oz. red beets (cooked & diced)
-1 oz. pinenuts (toasted)
-Kosher salt/ground black pepper (to taste)

1). In a heavy bottom sauce pan, sweat the shallots in olive oil & 1 Tbl. butter
2). Quickly add the thyme and stir in arborio rice
3). Continue to toast the rice in the oil for about 3 to 4 mins
4). Add the wine and stir until the wine is completely evaporated
5). Add the chicken broth, 1 cup at a time until the rice is cooked
6). Finish the rice with 2 Tbl. butter, goat cheese and beets
7). Season with salt and pepper; garnish with pinenuts and serve!
