Fit’N’Fresh: Ravioli Lasagna

Prep Time: 10 min.
Cook Time: 15-20 min.
Servings: 4-6

-Jar of your preferred organic tomato sauce (this recipe used Muir Glenn brand)
-2 packs frozen, local cheese raviolis (Gondola brand)
-homemade turkey meatballs
*1 lb. lean turkey
*1/4 cup pesto
*1/2 cup grated cheese
*1/4 cup breadcrumbs
-1 cup mozzarella cheese
-1 chopped zucchini
-1/2 chopped onion

1). Combine all ingredients for meatballs and shape into 2 inch balls; bake at 350 degrees for 10-15 minutes until cooked through
2). Chop and saute zucchini/onion until caramelized; set aside
3). In an 8×12 casserole dish, spoon in tomato sauce to cover bottom
4). Layer with 1/2 of zucchini/onion mix
5). Top with 1 layer of frozen ravioli
6). Top with crumbled up meatballs
7). Repeat layers until ingredients are gone; sprinkle grated mozzarella on top
8). Bake covered for 15 mins; uncover and bake for 5 MORE minutes to melt cheese
9). Serve and enjoy!

Second Helpings
Raspberry Mousse

-1/2 pint raspberries lightly crushed
-1 tsp. lemon juice
-2 Tbl. sugar
-1/2 cup heavy cream whipped until firm peaks form
-1/2 cup Greek 1% yogurt

1). In mixing bowl, fold in all ingredients for raspberry mousse and let chill for 1 hour or more
2). Top with reserved raspberries and whipped cream
*Makes 4 servings
