Shrimp Tacos with BBQ Spiced Popcorn

-1 cup pre cooked or raw peeled and deveined shrimp. (Split down the middle)
-1 bunch of scallions
-1 clove fresh garlic
-1 cup fresh or bagged popcorn
-Shredded carrot
-1/3  cup cilantro
-1/3 cup oil
-1 small tomato, diced
-1 cup baby arugula
-1/4 cup shredded white cheddar
-2 tablespoons of ranch or to your liking.
-2 tortilla shells

1). Peel and de-vein shrimp; then, cut in half
2). Place scallions, cilantro, oil and garlic in blender; blend until a paste forms
3). Marinate shrimp in mixture for at least an hour before cooking
4). In a sauté pan cook marinated shrimp (Shrimp will no longer be translucent)
5). Toss arugula, carrot, tomatoes, shrimp and ranch in bowl
6). Grill tortilla shells to your liking and place shrimp mixture on them
7). Top with shredded white cheddar and popcorn…..enjoy!

Shrimp and Egg omelet

-Marinated shrimp from night before
-3 eggs
-Diced tomatoes
-Left over arugula
-Shredded white cheddar

1). Sauté shrimp in hot pan, mix eggs in bowl and add to pan with tomatoes
2). Lower heat so you do not burn the eggs; once egg mixture starts to tighten up flip over and add cheddar and arugula
3). Place in tortilla and enjoy!
